• Grilled Fish

    Have you ever heard the phrase; “Eat Breakfast like a King, Lunch like a prince, and dinner like a pauper?” I have recently been trying to do all of the above because making sensible eating choices is the long term secret to looking good. That inspired this post. I just recently re-started graduate school and we all know how those can get. Once school starts, there is usually no time to prepare anything super fancy and most times you skip out on nutritious meals because a lot of people opt for things like noodles and anything super fast. Here is an easy straight forward recipe for those hectic school nights if you want to eat light.

    Ingredients (Serves one)

    1 fillet of Tilapia ( or any fish of your choice)

    1/4 of red bell pepper

    1/4 green bell pepper

    1/4 yellow bell pepper

    1/4 bulb of onion

    1 tablespoon of butter

    1 Seasoning cube

    a pinch of salt

    A pinch of grounded chilli flakes

    Method

    Wash and Season the fish with half of the seasoning cube and 1/2 a tablespoon of butter and cover with foil. Place in the oven and cook under 350 F for 15-20 minutes or till fish is done depending on the type of fish you use.

    Chop up your vegetables and set aside.

    In a small pan, heat up the rest of the butter and stir fry your vegetables in the pan. Add your seasoning, salt and grounded chilli flakes. Stir fry for about a 1- 3 minutes so you don’t lose the texture of the vegetables and serve with the fish.

    P.s: If you feel it’s too light, serve it with half a boiled potato or anything you wish 🙂
