• Plantain Pancakes

    Yesterday i went live with lost in lagos and we made plantain pancakes. It is safe to say that in Tannaz’s house, she is never going back to regular pancakes. Sometimes, when people here plantain pancakes, they turn their noses up at it. I promise it’s good. It’s better than Mosa guys! I know it sounds like I am a Mosa hater which I am not lol. However, this is nothing compared. This has milk! It is richer haha. Ok I would stop now.

    I realised I have had a few guests publish recipes for plantain pancakes on the blog with varying versions but I have never published one myself. This plantain pancake recipe has been a go to in my house during these covid 19 times. Like every african household, we bought plantains in bulk. Like every african household, the plantains went burst really quickly so we had to get creative.

    We mashed and stored some of the plantains that were already darkening in the freezer and we bring out a little bit at a time to use for Mosa or these pancakes or if we want to bake a plantain bread. If you have not checked out my mosa video this period, I forgive you! Here you go…

    In the mean time, here is the plantain pancake recipe..

    PLANTAIN PANCAKES RECIPE

    Ingredients

    • 1 ripe plantain (large)
    • 1 cup Plain Flour
    • 2 eggs
    • 1 cup of milk
    • 1.5  tsp of baking powder
    • 2 Tbsp of Sugar
    • A pinch of Salt
    • Butter or oil for frying

    Method

    In a bowl, mash your plantain and set aside. In a separate bowl, whisk your eggs and then add to your mashed plantain. Pour in your milk a little bit at a time and mix together.

    In a separate bowl, mix your flour, baking powder, sugar and salt and make a well.

    Slowly pour in your wet ingredients and fold into the flour.

    Keep pouring a bit at a time until all ingredients are combined.

    Heat up your butter or oil 1 tablespoon at a time and fry your mix, a bit at a time.

    Fry your plantain pancakes till both sides are brown but ensure you fry on low heat so it doesn’t burn your pancakes.

    Serve your pancakes hot with fruits or serve it savoury with eggs, sausages and other breakfast items.

      Thank you for sharing this recipe. Please what can I substitute for the eggs? I don’t like the taste of eggs in pancakes cos it nauseates me. Thankyou

        Hello Glory, you would need to either mash the plantain till its very soft. Blend it separately or miss cornstarch and vegetable oil into the recipe. But your best bet is to blend the plantain till very soft. That way you won’t need eggs.
