• Apple Cinnamon Chicken

    Oh this Apple Cinnamon Chicken was a hit this holiday. I took it to the office when I shot the recipe initially and the feedback was “Can we have more?” My co-workers were desperately asking for the recipe so instantly, I knew it would be a hit with everyone else. Sometimes, I like to live in my bubble of recipes that work and realities like this confirm it for me. I need to reiterate that this is not always the case. Everyone does not always like the recipes I have to offer. So much so they do not hesitate to let me know lol…..Ah well whats new?

    Recipe for Apple Cinnamon Chicken

    Ingredients
    4 pieces of Chicken Thigh
    2 Tablespoons of Butter
    1 tablespoon of Olive Oil
    4 Garlic Cloves
    1 teaspoon of Black Pepper
    1 teaspoon of Salt
    2 Seasoning Cubes
    2 Red Apples
    1/2 Red, Green, Yellow Bell Peppers
    1/2 bulb of Onions
    1 teaspoon of Cinnamon Powder
    A teaspoon of Ginger
    1 Tablespoon of Brown Sugar
    1.5 Tablespoon of Red Wine Vinegar (Substitute – Lemon Juice)


    Method
    In a non stick pan, heat up your butter and olive oil on medium heat. Season your chicken with seasoning cubes, black pepper and salt. Crush your garlic and stir fry in the heated butter for a minute. Add your chicken thigh and allow to brown on both sides. Once brown, reduce the heat and allow to cook gently for about 5-7 mins on low heat. Chop your red apples, onions and bell peppers into large squares. Once your chicken is soft, add in the chopped vegetables, cinnamon powder, ginger, brown sugar and red wine vinegar. Allow to cook for 2-3 minutes and serve hot with rice, potatoes, yams, plantains.
