• Palmwine Mango Cocktail

    My palmwine mango cocktail is going to be a staple in my drink menu. Oh my! It was so goodddd!!!! Sometimes when I try a recipe and I am feeling myself, i give it to my mum to taste. She is very critical about food and drinks so i trust her judgement. So she tried this and absolutely loved it. The feedback she gave was it was refreshing and it’s perfect for a hot day. Mangoes are also in season so I thought what perfect way to celebrate one of my favourite seasons.

    Please feel free to explore other strong flavours with this drink. I would recommend swapping the mango for pineapples or bananas. You can also go with apples for a milder flavour or using just mint to give a mojito flavour.

    I would also advise on the amount of palmwine you use in your cocktail as the alcohol creeps up on you because of the sweet refreshing flavour.

    My dad brought back a whole gallon of palmwine so guess who is going to be playing around with palmwine cocktails this month.

    I may venture into mixing other alcohols with it and trying very diverse flavours like spicy, sweet, refreshing and slightly bitter. Hopefully these experiments make it to the blog. For now, enjoy this delicious palmwine mango cocktail this weekend.

    Recipe for Palmwine Mango Cocktail

    Ingredients

    160 ml Palmwine

    120ml Blended Mango

    1 tablespoon Honey

    1 stick of Lemongrass

    A handful of Mint leaves

    1 tablespoon of grated ginger

    2 tablespoons of lemon juice

    Method

    In a blender, blend your mango with the lemongrass, mint, ginger, lemon juice, honey, ice and palmwine.

    Sieve the drink. If it is too thick, loosen it with more lemon juice.

    In a glass with ice, pour in your drink and serve cold.

    You can top it with extra mint leaves and a lemon slice.
