• Oat Moin Moin

    Team Fit Fam, gather here let’s explore this new frontier together. Oat Moin Moin (moi moi) is the dish we have been waiting for. It’s not all the way fit fam in its prep and you can tweak to suit your taste but its a start. For those that are not aware, moin moin is typically made from beans and is a staple in the Nigerian breakfast diet. It has a pudding texture so think of it as a savoury pudding if you will.

    With all the benefits of oatmeal, this is about to be a staple in my diet. I bet its about to be a staple in yours as well. I made it earlier in the week and brought for my co worker. Let’s just say she snatched the bowl from me never to return again. She better return my bowl o, plastic bowls are like diamond in my house. I digress. This recipe is super easy to make and i explored two methods of making it. A quick one(microwave) yes! Microwave and also the regular way of steaming in a pot with water.

    Technology has never been the enemy in my cooking. Some people say the sounds make up part of the nostalgia of Nigerian food. While I agree, I still think there are new sounds that make up part of our food like the beep of the microwave to let you know your rice is warm. I digress. I would talk through both methods and hopefully you get to try them both.

    Recipe for Oat Moin Moin

    Ingredients

    1 cup of Oatmeal

    1/2 cup of chopped prawns

    1 tablespoon dry pepper

    1 tablespoon of crayfish powder

    2 seasoning cubes

    1 cup of blended tomato and pepper mix

    2 tablespoons of chopped red onions

    2.5 tablespoons of Palm oil

    Method

    Heat up your palm oil and stir fry the onions for about a minute.

    Pour in your tomato pepper mix and stir on medium heat for about 3 minutes.

    Season with your seasoning cubes, crayfish powder, and dry pepper and allow to simmer on low heat for 2 minutes.

    Add your prawns and allow to cook in the sauce for 3 minutes on low heat.

    Once prawns and cooked, stir and taste for seasoning and turn off the heat.

    In a bowl, mix your oat with the tomato sauce pouring a little at a time till properly combined. Add 1/4 cup of water to loosen the texture of the oat moin moin a bit. You may need to add another 1/4 cup depending on how reduced your tomato sauce was.

    If cooking in the microwave, pour your mixture in a microwave safe bowl and heat for 1:30s – 2 mins depending on the strength of your microwave. Once heated and cooked, leave to cool and serve.

    If cooking in a pot, heat up your water and reduce to low heat. Your water must serve as a steamer so it should not be over flowing. You can wrap your mix in banana leaves or use a mould and steam. Serve with eggs, chicken, beef, fish or any other accompaniment of your choice.
