Designer puff puff is what I am calling this snack because I don’t know what else to call it. I can go with the cliche method and name the puff puff based on the ingredients I used to top it off or I can just stay with a more generic term so you can be inspired to infuse or top yours off with other things.
I was at a wedding in Lagos, Nigeria the other day and we were served our usual plate of small chops. The wedding was not a big one and the small chops did not come in foil packs or anything so I wondered why caterers weren’t doing more to the puff puff to enhance the flavor. Maybe cost? Maybe they just don’t want to change anything?
Whatever the case may be, I felt bored of the regular small plate of puff puff and decided to jazz mine up a bit at home. I made a puree out of mango aka i blended it and pumped into the puff puff to mimic a jam donut concept. I also had some zobo syrup I had made previously and decided to use that as well. I think i’d upload the zobo syrup recipe as a different post. It’s so convenient, you can use it on pancakes, cakes, waffles, buns, ice cream or anything that you don’t mind have a zobo syrup on but i digress. For my third combo, I stuffed the puff puff with the mango puree and drizzled a mix of both the mango and zobo over it. That one was a bit overkill for a small ball of puff puff but I was enjoying myself. I also sprinkled some coconuts over the puff puffs for extra crunch. I would like to see what types of designer puff puff ideas people come up with.

Recipe for Designer Puff Puff
Ingredients (Makes about 10-15 small pieces)
1 1/4 cups of All Purpose Flour
1 teaspoon of Yeast
1.5 Tablespoons of Sugar
3/4 cups of warm water
1 Small Mango
2 teaspoons of Zobo Syrup
Oil for deep frying
Method
In a bowl, pour in your yeast and warm water and leave for about 5-7 minutes when bubbles start to form.
Mix your sugar and flour in a separate bowl and set aside.
Stir the yeast and water and empty the content into the bowl of flour.
Combine till the mixture is smooth and set aside in a warm place for the mixture to rise.
Give it about 30-45 minutes for it to rise. Mix again and heat up your oil for frying.
Scoop small amounts of the mix at a time into the hot oil and allow to deep fry till golden brown.
Take out and drain the excess oil.
With a squeeze bottle pierce a hole in the puff puff and squeeze in the mango puree. If you dont have a squeeze bottle, make a hole with a knife, empty the mango puree into a nylon bag, make a tiny hole at the tip of the nylon and squeeze into the puff puff.
For the zobo, just drizzle the zobo syrup over the puff puff and sprinkle coconut flakes over your puff puffs and serve warm.
