• Mosa Recipe

    Mosa is a staple in every Nigerian wedding these days. It is part of the food group called “small chops” also known as appetizers. They are these sweet/savoury little puffed balls made from over-ripe plantain. 

    Other items typically included in a small chops basket are puff puff, spring rolls, samosa, grilled chicken, peppered gizzard and maybe snails if you are lucky.

    You also have the ability to incorporate any other food item like shredded chicken, prawns or fish if you like into the mixture. This makes the mosa more interesting. However, traditionally, they are made with just the over-ripe plantain and it’s a good way to avoid food wastage in your household. 

    Recipe for Mosa

    Ingredients

    2 Medium sized Fingers of Plantain

    A handful of Onions

    1-2 Scotch Bonnet Peppers (Substitute Chilli Powder)

    3/4 cup of Water

    3 heaped tablespoons of Flour

    1 seasoning cube

    Salt to taste

    1 tablespoon of Crayfish powder (Optional)

    MOSA INGREDIENTS

    METHOD

    In a clean bowl, peel your plantain, mash and mix with your flour. 

    Add in your pepper, onions, crayfish powder if using, seasoning cube, salt and water.

    Blend and transfer back into a bowl and beat to incorporate air.

    Heat up your oil and fry your mosa in small round balls until golden brown.

    Cool slightly and serve as a snack with a pepper garlic dip.

      HELLLPPPPP!!!!! How do i clean dried smoked fish pls? the one some pple call roundabout. My husband complained dre was still sand in it despite d bowls of water i had dunked it in prior to cookin and ds was after 10 mins immersion in hot salty water!!!

        You should get a brush or wire sponge specifically for your fish. You should also use salt to scrub the fish not just the brush or sponge and then immerse in hot water.

        It would feed about 4 people. You would need a lot more for 30 people especially if you are having a party

        Uh-oh. It really shouldn’t. Did you deep fry it? Plantain usually sticks but my flour content was enough so it didn’t stick. Maybe you didn’t have enough flour in it.

      Hope most people here have actually tried this recipe. The above recipe ain’t complete. Real mosa is made with over-ripe plantain and puff-puff mix.

        Hi Stella, blend your peppers and garlic together. In a pot with a cooking spoon of oil, heat up the oil, fry the pepper and garlic mixture. Add a pinch of seasoning and that’s it.
