I work at a coffee house in Tennessee and my next door neighbor is from Nigeria. I think he’s baffled that we don’t serve rice. It isn’t that I don’t want to. It’s just not one of my culinary skills and I’m more of a noodle person. I would like to surprise him and make a dish he will like and be blessed to have it. Do you think your recipe is something he’ll enjoy?

He works next door so I suspect I’m going to be learning a few dishes for him. His staff eats here all the time but we never have anything for him to eat. I’d like to change that. I think it will be fun to learn. Do you mind if I credit your recipe on my site when we start serving rice?
