• Banana Peanut Butter Puff Puff

    Banana peanut butter puff puff is me coming with my tails in between my legs begging for your forgiveness from the Iru Puff Puff episode. There were threats and there were chants. Placards and stones. Ok! Maybe I am exaggerating a little bit but it didn’t sit well with a number of people. I can understand why to be fair.

    Iru (Fermented Locust Beans) is strictly used in soups and stews and never crosses over into the sweet dishes. The outrage was very warranted. However, we are not here to discuss that recipe but this Banana Peanut Butter Puff Puff recipe. The Banana puff puff idea is not new as there are historical dishes around the concept. In sierra leone and some other parts of West Africa, Banana Puff Puff is called Akara Mboro. I decided to scoop in a bit of peanut butter to jazz things up as we would typically eat banana and peanuts (groundnuts) as a snack in this part of the world.

    If you have peanut allergies, you can substitute with almond butter or cashew butter or whatever you are not allergic to. If you have general nut allergies, you should skip the nuts altogether. Let me know if you try this recipe.

    RECIPE FOR BANANA PEANUT BUTTER PUFF PUFF

    Ingredients

    1 Small Banana

    2 Teaspoons Crunchy Peanut Butter

    1/8 Cup Yoghurt

    1 Teaspoon Baking Powder

    1/2 Cup All Purpose Flour

    Method

    In a bowl, mash your banana till very smooth and even slightly stretchy.

    Add your peanut butter and mix till everything is combined.

    Pour in your yoghurt and mix with the banana and peanut butter till its a consistent mix.

    Add your baking powder and slowly pour in your flour.

    Mix everything till smooth and stretchy and set aside.

    In your oil on low to medium heat, scoop little balls and fry till golden brown.

    Serve hot with a cup of tea.
