• Beans and Plantain Moi Moi

    Crowdsourcing ideas is one of my favourite things about blogging because it brings recipes like beans and plantain moi moi out of the blue. I wish I could take credit for it but in this case, it was @fitnigeria on Instagram that provided this gem. I only offered to cook it as an experiment.

    A little bit of context….

    So this year, I have decided to play around with one ingredient per month on social media. Just to open the minds of everyone to the possibilities of our ingredients. So in January, the ingredient of the month was plantain. I had posted a recipe for plantain moi moi and to my surprise, a number of people expressed that it wasn’t their favourite thing on the menu. They preferred moin moin made from beans. So that was when @fitnigeria recommended I mix both in the comment section and as they say the rest is history. Well not totally history as I am here sharing the recipe with you all.

    Recipe for Beans and Plantain Moi Moi

    Ingredients

    1 cup of Brown Beans

    1.5 fingers of Plantain

    A cup of Blended Tomato

    1 3/4 cups of water (For blending)

    1/2 bulb of Onion

    3 Scotch Bonnet Peppers (Increase if you like spicy moi moi)

    2/3 cup of Palm oil

    3 Seasoning cubes

    A teaspoon of Salt

    1 tablespoon of Crayfish Powder

    Method

    In a bowl, soak your beans in water for a few hours. Wash to remove the skin off of the beans and set aside.

    Peel your plantain and set aside.

    In a blender, pour in your beans and water and blend till smooth. Add your plantain and blend till smooth and combined.

    Finally pour in your palm oil, blended tomato, onion, peppers, seasoning cube, salt and crayfish powder and blend till properly combined.

    You can use steaming cups or leaves to mould. Rub some oil on the cups or leaves and pour in a bit of your mixture.

    Place in a pot half filled with hot water on low – medium heat and allow to steam for 40-50 minutes. To check if its ready in the cup, you can use a knife to stick in the mix, if it comes out clean, its ready. For the leaf, just leave to cook a little longer and allow to rest in the steamer for 10 minutes extra till it cools down a bit.

    Serve hot with any protein of choice.

      The palm oil… This is worth trying. I wonder whether unripe plantain will come out nice?
