Shakara Yamarita was as a result of serious cravings I had for yam, egg and smoked beef. I decided to indulge myself for breakfast yesterday before work. I know, I know, who makes such decadent breakfast before work? Well in my defense, I had chopped all the vegetables and smoked beef the night before. The yam was soaking in slightly salted water in the fridge till the next morning. This helped make the process the next day so much easier.
This shakara yamarita recipe is not that different from any other yamarita recipe but it is best served with a tomato based sauce or ketchup with a tinge of spice for heat. It is also a more decadent version than you are probably used to. You can also add more ingredients to it but ensure you chop it into little pieces. Some people bake their yamarita, I was in a hurry so I pan fried mine but you can also bake it.
Recipe for Shakara Yamarita
2 slices of Yam
1- 2 Eggs
A handful of chopped red and green bell peppers
1 handful of chopped red onions
1/2 cup of chopped smoked beef
Half cup of bread crumbs
1 Chicken Seasoning cube
1/2 teaspoon of curry powder
A pinch of black pepper
1/2 teaspoon of chili powder
1 teaspoon of suya spice
Oil for frying
Boil your slices of yam for 3-5 minutes.
Take out of the pot and cut into desired shape.
Whisk your eggs with the vegetables and season with the seasoning cube, curry, black pepper and chili powder.
Season the bread crumbs with the suya spice and toss till well combined.
Dip the yam slices in the egg, then the breadcrumbs and back in the egg and finally the breadcrumbs.
Place in a plate. Scoop the egg with vegetables and smoked beef onto the slices and sprinkle breadcrumbs over it again.
Place gently in the pan and allow to fry on both sides.
Serve the shakara yamarita warm with a tomato based sauce or a spicy sauce.
