    If you have been following my posts this Christmas, you can tell I am trying a few interesting ideas that are not too out of the ordinary but different enough to make it to your Christmas lunch or dinner table. One of such recipes is this Ayamase stir fry chicken.

    Basically, you stir fry the chicken in the ayamase base sauce with some vegetables. This serves as a perfect side dish for rice but can be eaten as a standalone dish with the right amount of spice. I thoroughly enjoyed making this as well as consuming it. If you just started following my blog, I have another interesting Ayamase recipe you can try which is Ayamase Jollof Rice. There is something about that sauce that works well with anything. If you don’t know what Ayamase is, its a western Nigerian sauce that is made with green peppers and palm oil but the palm oil is bleached and a few things like iru (fermented locust beans) and crayfish powder are added to the sauce to give it its unique flavor.

    I took a bold step to make a stir fry out of it and enjoyed it. Hope you will too.

    Recipe for Ayamase Stir Fry Chicken

    Ingredients

    1 Pounded of Shredded Chicken Breast

    4 – 5 Green Bell Peppers

    1 red bell pepper

    A yellow bell pepper

    Handful of green beans

    1 large bulb of Onion

    3 scotch bonnet peppers

    1 teaspoon of Iru

    1 teaspoon of crayfish powder

    Seasoning cubes

    2.5 cooking spoons of Palm Oil

    Method

    In a separate pan, season and stir fry your chicken till cooked.

    Blend your green peppers and boil down to remove any excess liquid and set aside.

    Cut up your vegetables and set aside.

    In another pan, heat up your 2 cooking spoons of palm oil till it becomes clear. This may require removing it from the fire a few times so it does not over smoke.

    When palm oil is clear (almost the color of vegetable oil) fry your blended green peppers till the oil comes to the surface.

    In a separate pot, heat up the remaining half spoon of palm oil till it clears and set aside.

    Season the sauce, add your iru and crayfish powder.

    Add your chicken and stir in and allow to simmer on medium heat for about 3- 5 minutes.

    Lastly, add your chopped vegetables, stir in and pour in the already bleached oil over the stir fry and serve hot.
