• Semolina Pancakes

    At the beginning of the year, I always look through my pantry to check for products that are expired or near their expiration date so they can be used up really quickly. One of such products i found was our pack of semolina. Throughout the year, it is not a hot swallow on the list of our options to consume but we keep it around anyway for good measure. I decided to convert it to a breakfast dish and semolina pancakes were born. This is actually not a very new dish on the world map as people in the middle east already use semolina for their pastries so I decided to use mine for breakfast. I topped this with apples and agbalumo slices (african cherry) as they are in season and also to make it more Nigerian 🙂 This was very easy and quick to make. The apple took about 10 minutes to become soft but you can also serve the apples fresh instead of boiling it. I must however warn you that this is a very filling breakfast or maybe my stomach has shrunk but I was waddling after my meal so consume with caution. I personally chose to use coconut milk and coconut oil but you can use what is available to you as this was just a personal preference. 

    Recipe for Semolina pancakes

    Ingredients

    1 cup of Semolina Flour

    1/2 cup of  coconut milk

    1/4 cup of sugar

    2 eggs

    3 tablespoons of coconut oil

    1/2 teaspoon of baking powder 

    1/2 teaspoon of vanilla extract

    a pinch of salt

    1 cooking spoon of Vegetable Oil

    Garnishing

    1 whole Red Apple

    2 tablespoons of honey

    1 Agbalumo peeled and sliced

    1 teaspoon of grated cinnamon

    A handful of crushed groundnut

    Method

    Combine the dry ingredients excluding the peanuts separately in a large bowl. In another bowl, combine the wet ingredients excluding the fruits and honey. 

    Pour in the wet ingredients into the bowl of dry ingredients and combine till smooth. 

    In a pan adding 1 tablespoon of vegetable oil at a time, scoop a portion of the mix and fry. Flip to brown on both sides and set aside.

    For the garnishing

    In a pot of 1 cup of water, chop your apples and bring to boil.

    Mash the apples in the water and stir in one tablespoon of honey and the cinnamon powder.

    Allow the apples to caramelize a little and let the water dry then take off the heat and allow to cool. 

    Serve the apples on the pancakes with more honey drizzled or syrup. Add the slices of agbalumo and sprinkle the crushed peanuts.
