    Mini Pancakes with Fruits

    I started photographing my 12 days of Christmas dishes quite early this year in comparison to my regular rushed behavior in previous years. Growth needs to always be celebrated haha. While there are benefits to starting early, there is also the possibility that someone has thought of a recipe first and has put it out there before you’ve had a chance to publish yours. However, I was not going to let that phase me. A chef i follow on Instagram posted the exact same idea the same day I photographed this dish. What are the odds? Ah well it’s still a nice party addition especially for children but adults would also love it. You can play around with your garnishing for this simple appetizer or dessert whichever way you choose to have it. Some suggestions are caramel and crumbled cookies mixed together and drizzled over it. Enjoy.

    Recipe for Mini Pancakes with Fruits

    Ingredients

    1/2 cup of all purpose flour

    1/4 cup of milk

    2 tablespoons of sugar

    1 eggs

    1.5 tablespoons of melted butter

    1/4 teaspoon of baking powder

    1/4 teaspoon of vanilla extract

    a pinch of salt

    1/2 Cup of Chopped fruits

    2 tablespoons of syrup (replace with honey)

    Method

    In a bowl pour in flour, baking powder, sugar and salt.

    Pour in your melted butter and mix into the dry ingredients.

    In a separate bowl, whisk your egg, milk and vanilla extract.

    Pour in your egg mix into the flour and combine till smooth but slightly thick.

    Heat up your pan and lightly grease. With a table spoon, slowly pour in your mix into little circles and fry on medium heat till brown on both sides.

    Chop up your fruits of choice and set aside. Stack your mini pancakes with the fruit as the topping with toothpicks and drizzle your syrup over them.

      Hi maam..do i nid to add water to mixture?and how mch of oil do i nid to fry
