• Banana Oat Cookies

    I happen to be one of those people that buys groceries and uses only a pinch of it for most of the year. Given that I move houses ever so often, I end up giving a lot of these groceries when I’m moving to enable an easier transition. When I moved to San Francisco, i decided that I would make an effort to develop recipes based on my existing groceries. Oat meal is also something I know that ends up staying forever in my kitchen cabinet. Even in my house in Nigeria, that used to last a while till my dad developed a serious liking for oatmeal. I have also realized that oats are very high in fibre so I try as much as possible to incorporate it into my diet as much as i can. Some benefits of fibre are;

    – Lowers blood cholesterol

    – It slows the absorption of sugar

    – Reduces your chance of getting heart diseases

    You should definitely consider incorporating oats into your diet as the long term benefits are worth it. Enjoy my recipe on Banana oat cookies, you can also choose to limit the sugar or use a substitute like honey in this recipe. I also made my cookies huge so you can choose to make your cookies flatter by scooping a smaller amount. I also made different types of the cookies, I rolled some in M&M’s and some in coconut flakes.

    Ingredients

    11/3 cups of Oat (Quaker oats would work)

    1 mashed ripe banana

    1 egg

    1/2 teaspoon vanilla

    Handful of raisins

    1 tablespoon of sugar

    1/2 teaspoon baking powder

    For variety

    Handful of M&M’s

    Handful of Coconut flakes

    Method

    Whisk your egg and add your vanilla. Mix them with the banana and raisins.

    Add the dry ingredients and mix all together.

    Heat up your oven to 350 F and either grease a pan or use parchment paper on foil paper so it does not stick.

    Scoop your mixture onto the foil. If you are mixing the cookies with M&M’s or coconut flakes, this would be the time to roll the mixture in them. Feel free to make your cookies flatter. I made mine chunky because I love chewy chunky cookies.

    Bake for 10 minutes on one side, turn them over and bake for 10 more minutes. Serve warm with tea.

      Vegans can kick out the egg as the banana does a great job holding the cookie together, I make a 2 ingredient version. Just bananas and oatmeal. When I’m feeling funky, I throw in a few seeds, flaxseed meal (which can act as an egg replacement), dessicated coconut, cinnamon or vanilla extract! No sugar as I think my tastebuds are getting old, I can’t stand many sweet things these days :/

            Hello Vicky,

            I did not test it out to see how long. My guess would be not more than 3 days because it is made with bananas so it is more likely to go bad faster. I may be wrong

      u guys r doing a “wow” job here, pls keep it up… not much of a baker myself but want to try this, but I’m not familiar wit d raisin thing, is it available in Nigerian markets and shops?

        Yes debbie it is. You can also use currants which are sold either in the market or supermarkets
