• Strawberry Kiwi Granita

I’m so excited about the theme we chose for this years 12 Days of Christmas…..DESSERTS. Everyone loves dessert, something sweet we can indulge in no matter how stuffed we may be from eating. This summer, I was watching CHOPPED on The Food Network and they had to work with kiwi’s and this chef made a Granita (Italian origin), I had never heard of it before then and I decided to look into it. Fast forward to december and we had to come up with dessert recipes and I was like I am definitely putting this on the list. It is so easy to prepare, you can make it days in advance, you can get the ingredients anywhere and it is especially perfect for our ‘fit fam’ family. The best thing is that you can mix in as many fruits as you want, any variation and it would still be perfect. Oh, and this would also be perfect during those hot summer months.  I love anything strawberry-kiwi, so i give you on this third day of christmas, Strawberry Kiwi Granita.

    Ingredients

    Strawberries

Kiwis’ (basically any fruit you like)

1/2 cup sugar (depending on how sweet you want it to be)

    A shot of vodka (optional)

    1 cup of water

    Recipe

    • Using a small sauce pan, add in the water and sugar and boil for 7-10 mins.
    • Once it has been boiled, put it in the fridge to cool it down a bit
    • Clean the strawberries and kiwis (ensure to remove seeds from the kiwis or any fruit being used)
    • Put the clean fruits in the blender and blend until it is smooth.

Note: If you are using orange, lemon, lime, you don’t need to blend you need to squeeze out the juice from the fruit.

    • Add the sugar water and blend to ensure proper mixture, then add the vodka or any alcoholic beverage.
    • Pour mixture into a large casserole dish or baking pan (any wide bowl may be used).

    • Put the casserole pan into the freezer and freeze for an hour
    • Use a fork to scrape/scatter the ice that has been formed after the first hour and put back into the freezer. the idea is to get it looking like sand/shaved ice, after it is completely frozen.
    • Repeat the above process over and over until it is completely frozen.
    • (Optional), you can leave it in the freezer without breaking it the first couple of hours, but that just makes it harder to break once it is completely formed
