• Abacha African Salad

    My very first encounter with Abacha African Salad dish was back in Queens College with one of my Igbo lesson teachers. She always sent one of the students to get it before she got down to business. She was nice enough to ask us if we wanted some and for the people that knew what it was, they always opted for it with glee. Fast forward to a few years and here I am with a food blog that comes with requests. This was one of the requested dishes so I decided to do some research and employ ingredients available to me. This dish usually contains garden eggs (the green ones) but I did not have that. I am also aware that some of the spices like Uda ( African nutmeg) may not be available to you as well but feel free to explore this dish with what you have. However, here is the Afrolems version of Abacha 🙂

    Recipe for Abacha African Salad

    Ingredients (Serves 2-3 people)

    1 cup Abacha (grated cassava)

    1/2 Cup Ugba (locust beans)

    1 cooking spoon Palm oil

    1 cup of desired boiled proteins ( I used cow skin (pomo), shaki (tripe), beef, shrimp)

    1/4 bulb of onion

    1/8 red bell pepper

    1 tablespoon of baking soda + water mixture (I used baking soda in place of potash)

    1 teaspoon of ground shrimp

    a handful of shredded utazi leaves

    A tiny piece of ogiri (fermented locust beans)

    Method

    Season and boil all proteins as necessary and chop into small pieces

    Soak the abacha in warm water for about 30 minutes

    Chop the onions and bell pepper

    Heat the palm oil and allow to cool for a bit and pour in the baking soda mix. Stir till it forms a paste.

    In a sperate bowl, Mix your ugba, proteins, onions, pepper, ground shrimp and ogiri. Remove the abacha from the water and allow to strain and pour in the bowl.

    Pour the paste over the content of your bowl and mix and finally add the utazi leaves. Stir and serve 🙂
