• Peri Peri Chicken and Savoury Rice

    The Portuguese people I have to admit have this one on lock down. I remember when Barcelos and Nandos came to Nigeria. Chicken was never the same again for me. I was always curious as to how they made their Peri-Peri Sauce. I have to admit, I haven’t completely mastered the sauce, but I got somewhat close. I will also keep trying till it’s perfect. I mean if it was so easy to achieve Nandos and co would be out of business. I decided to serve mine with Savoury Rice. Here is my version of Peri Peri Chicken or Piri Piri Chicken as the Portuguese people call it.

    Recipe for Peri Peri Chicken

    Ingredients

    8 Chicken Pieces
    5 Bird’s eye Chilli Pepper
    1 Scotch Bonnet Pepper (Ata Rodo)
    1 Small sized Lemon (Squeeze all the juice out)
    1 Bell Pepper
    2 tablespoon paprika
    2 teaspoon  salt
    1 tablespoon oregano
    1 Seasoning Cube
    1/2 inch of Ginger
    1/2 bulb of onion
    ½ teaspoon red chilli powder
    ½ cup Vegetable Oil
    5 cloves of garlic
    4 tablespoon dark vinegar
    1 teaspoon black pepper
    ¼ teaspoon Red food colouring

    Method

    Wash the Chicken and set aside.

    Blend all the Ingredients together and pour as needed on the chicken. Rub it into the chicken and allow to marinate for about 3-5 hours.

    If you have a grill, heat up the grill and and place chicken on to cook. If you don’t and you are using an oven, set the oven to grill/broil at first and let the chicken brown on both sides then reset the oven to bake at 370 F and bake the chicken till cooked.

    If there is left over sauce from the blend, heat it up with a little water and serve with the peri peri chicken.

     

    Savoury Rice

    Ingredients

    2 cups of Rice

    1/2 bulb of Onion

    1/4 pound of Cabbage

    1 cup of chopped carrots

    1 egg

    1 cup of melted butter

    Chicken Seasoning

    1 teaspoon of curry

    a pinch of thyme

     

    Method

    Wash and Parboil the Rice for 10 minutes.

    Heat the butter in a pot and pour in the chopped onions, carrots and cabbage and stir in.

    Break the egg into the veggie mix and stir in. Add your seasoning and pour in the parboiled rice. Pour in 1 cup of water and cook on medium heat till the rice is soft. Stir and serve with the chicken.

        They are types of spices, paprika almost looks like dry pepper but its not, oregano is green. They are usually already prepackaged

      Nice. Inspired to make it yesterday. Turned out real nice except that I may have added a lil bit too much curry to the rice. Also didn’t have time to make the chicken though so just substituted with some chicken sauce I had previously. Thanks Afrolems and keep up the good work.

        Typically from 35-40 minutes. This depends on the type of chicken you use
