• Croaker Fish Kè Cream

If you are following Afrolems on Facebook or Instagram which you should be *straight face* you would have seen the picture of this dish. I also tweeted about how difficult it is to season croaker and many people agreed with me. Have you ever had to cook croaker in the regular Nigerian stew? It always tastes so bland. Yuck! Well I tried cooking it in cream and I was completely blown away by the result. The cream somehow added a new dimension of taste to the normally bland fish. Guess what, I didn’t even need to add salt to it. The maggi I added was just alright. I served it with Native yam which is also known as bitter yam or three leaved yam. You can serve yours with an Irish potato or sweet potato or any carbohydrate of your choice really. Enjoy

    Ingredients (Serves 1)

    A piece of Croaker fish

    A slice of onion

    1 scotch bonnet pepper

    1/2 cup of cream

    1/3 cup of butter

    1 tablespoon of dry pepper

    1 teaspoon of curry

    2 Maggi Cubes

    1.5 Cup of water

    Garnishing(optional)

    1 Cherry tomato

    1 olive

    1 cube of Feta cheese

    2 thin slices of Carrots

    Method

Wash fish and season with dry pepper and 1 cube of Maggi and bring to boil with water till fish is soft. I estimate about 7 minutes on medium heat.

Once fish is cooked, heat up the butter and fry the onions and pepper, add the rest of the seasoning and allow to cook for 2 minutes. Add the cooking cream and stir in. Allow to simmer on low heat for another 2 minutes.

For the garnishing, slice your carrots and burn in fire or with a lighter.
