• Asun (Spicy Goat Meat) by Afrolems

    Chilli alert!!! If you do not like spicy food, this asun dish is a no-go area for you. However, if you are like me and your taste buds are dead to pepper then please proceed. I remember Christmas of 2011, I had friends over as my mum had cooked up a storm. My friends heaped tons and tons of food on their plate till they got to the Asun then they knew “power pass power!”( beyond their control). Asun is an amazingly tasty dish and can be served as an appetizer at parties. However, I believe that once you start with Asun, with the amount of water you drink, you may not have space for the main dish. Enjoy the Afrolems version of this dish.

    Recipe for Asun

    Ingredients

    1 Pound of Goat Meat

    5 Blended Scotch Bonnet Peppers (Preferential- you can use more or less)

    2 cubes of Maggi

    2 teaspoons of salt

    1.5 cooking spoon of vegetable oil

    1 bulb of Onion

    1 clove of Garlic

    Method

    Marinate Goat meat overnight with Salt, garlic, blended scotch bonnet peppers and 1 cube of maggi and place in the fridge.

    Heat up oven to 380F if you do not have a grill. Grease a pan with vegetable oil and place the goat meat from the night before in the pan and place in oven for 30 minutes.

    Check to see if goat meat is soft. Typically goat meat without skin should be about ready to take out at this point. However, goat meat with skin may require more oven cooking time.

    Cut Onion into thin slices and heat up the rest of the vegetable oil in a pan.

    Toss in the onions and fry for about 45 seconds, toss in your spiced goat meat with more scotch bonnet peppers if you like into the pan and stir fry, add 1 more cube of maggi and salt if necessary.

    Allow to fry dry and serve with Boiled plantains, roasted plantains or as a stand alone appetizer

      Does the goat meat have to be cut really thin or small for it to cook in the time you wrote. Or will normal cut sizes cook well. I’m scared of hard meat !!!!

      Sorry if dis sounds lyk a stupid question…did u cook d meat before placing it in d oven? And also, can I replace vegetable oil with olive oil? Thanks.

        No question is a stupid question πŸ™‚ I placed it in raw so it could soften. You can substitute with olive oil if you like πŸ™‚

      Please when you leave the raw meat overnight wont it get bad or do you put it in the fridge to marinate?

        Hi Anastasia, yes it should be in the fridge. If you are marinating any type of raw meat over night, it should always be in the fridge.

      Ok o. I finally had some asun and it was pretty good. I didn’t need to drink a whole lot of water but it was like the spicy effects built over time, lol. Now I know and I can try to make it.

      Hello Afrolems, I see that you said we can cook the meat instead of ‘ovening’ it preferably. So my question is that while boiling, should we mix the scotch bonnet peppers inside it or just add it at the fry stage? Thanks, God bless your good works.

        No add it at the fry stage. if you want it extra spicy, you can add some at the boiling stage and then again at the frying stage.

        Hello Nita Cuisines,
        You do not need any more spices πŸ™‚ Just make sure to add enough of everything and constantly taste for seasoning or spice level as it has to be very spicy. If you can use the camerounian black pepper or shombo pepper powder in addition to what is listed that would be great otherwise you are good to go
