• Chef of the Week: Ohita Ogolo

    Hello Fans of Afrolems,

    I’m really loving this Chef of the week thing…Last week brought us some Ghanian recipes…This week we have some Nigerian Recipes..Feel free to try them out. Enjoy 🙂

    Fish Pepper soup

    What you need

    Mackerel- cut into 4 pieces

    1 onion
    2 scotch bonnet peppers

    1 maggi/Know
    curry, salt, garlic powder and dry pepper

    What to do

    In a pot, boil fish with 3 cups of water.
    Add chopped onions and chopped scotch bonnet peppers.
    Add spices to taste
    Allow to cook for 20mins or until fish is cooked.
    Add more water if needed
    Serve with plantains, yams, rice or alone.

    Boli and fish

    What you need

    1 Mackerel- cut into 4 pieces

    1 Ripe plantain

    Tomato paste

    Onions

    Palm oil

    Spices to taste, salt, garlic, ginger, Maggi

    Clean mackerel and cut into 4 pieces.

    Marinate with salt, garlic, ginger and maggi paste and leave to stand for 30mins.

    Fry fish for 10-13mins or until brown.

    In a separate pot, boil plantain until soft.

    In a pot, add 4tb of palm oil, add tomato paste and fry.

    Add spices to taste.

    Mix plantains in sauce and allow boil for 2-5mins

    Serve with fried fish

    Baked Whole Tilapia w/Potatoes

    What you need

    Whole Tilapia

    Spices: Oyster sauce, salt, garlic, ginger, pepper, and basil

    1 Onions

    1 ball pepper

    Potatoes

    What to do

    Clean Tilapia and remove all scales.

    Marinate in Oyster sauce, salt, garlic, ginger, pepper, and basil and leave to stand for 30 mins.

    Covered in onions and peppers and put in a foil paper.

    Bake in the oven for 40mins. On 300.

    Potatoes

    Cut and Boil potatoes in salted water until soft.

    In a pan, add 4tablespoons of oil

    Roast in a pan adding a sprinkle of salt and basil leaves to potatoes.

    Roast until a golden brown.

    Scotch Eggs
    What you need
    7 eggs 1 extra egg to glaze
    1 roll Sausage
    1 cup bread crumbs
    1 tsp Goya Adobo seasoning
    1 tsp garlic/curry powder
    1 tbsp flour

    What to do
    1. Boil eggs over medium heat for 10 minutes. Remove and put eggs into cold water. Set aside.
    2. Remove sausage and add adobo curry, garlic powder. Work into sausage with hands
    3. Break last egg, whisk.
    4. set aside bread crumbs
    5. Prepare pot to deep fry or Prepare a baking pan with foil.
    6. Drain water and peel eggs. Roll each egg in flour.
    7. Scoop 1.5 tbsps sausage mixture into your palms (dampen palms). Make a well in the center. Put egg in center and work sausage around till covered. Roll covered egg in beaten/whisked egg.
    8. then roll in bread crumbs
    9. fry.

    Ohita is quite the chef and these are yummy dishes…Have fun making them or just admiring lol

      oh yesss I love this scotch eggs recipe. I was thinking of making it the other day, but was so clueless as to how.
